Salad Ingredients:
- Romaine Lettuce
- Peas – cooked
- Cucumber chopped
- Red Onion (thinly sliced)
- Avocado
- 1 tbsp fresh dill
- Salt + pepper to taste
Dressing:
- 3 tbsp Vegan Mayo from Trader Joe’s
- 1/2 lemon – juiced
- Green Goddess Seasoning
Chop romaine in small slivers. Add in cucumber, peas, avocado and dill. In a separate bowl mix together vegan mayo, lemon juice and green goddess seasoning. Add dressing to salad and sprinkle with pepper and enjoy!
Cauliflower Rice Ingredients:
- 1/2 cauliflower head riced (or 1 bag of TJs riced cauliflower)
- 1/4 cup chopped cilantro
- 1/2 Lime, juiced
- 1/2 lime zest
- 1 tbsp Olive Oil
- Green Goddess seasoning
Add riced cauliflower to a pan with olive oil. Sprinkly in 2 to 3 teaspoons of green goddess seasoning. Cook a few minutes until cauliflower rice is tender and looks lighter in color. Add in lime juice and lime zest, cilantro and salt to taste. Serve!
Atlantic Salmon with herb butter
It comes prepackaged from Trader Joe’s in the frozen section. I made it in the oven per the packaging.
